ABOUT AKAUSHI

Out here on the ranch, we like to keep things simple and honest — and the Akaushi breed fits that spirit. In Japanese, Akaushi means “red cattle”Aka for red, Ushi for cow. These cattle come from the southern islands of Japan, mainly Kumamoto and Kochi, where ranchers have been raising them with care and tradition for generations.

Back in the early 1900s, Japanese cattlemen refined the breed by crossing it with Hanwoo from Korea and Simmental from Switzerland. After they built the genetics they wanted — strong, consistent, and dependable — they closed the herd, locking in the bloodlines that make Akaushi what they are today.


Akaushi are one of the four true Wagyu breeds of Japan. And just so it’s clear, Wagyu simply means “Japanese cow.” Nothing fancy — just the name for cattle born and bred in Japan.


What makes Akaushi special is the way they marble. Their beef carries a high level of monounsaturated fat, especially oleic acid — the same heart‑healthy fat you find in olive oil. That’s what gives Akaushi beef its rich, buttery flavor without losing that clean, honest beef taste ranch folks appreciate.
